Garlic + Honey Roasted Brussels Sprouts

My love for roasted Brussels sprouts runs deep. You can dress them up any which way and they come out absolutely perfect every single time. Now, I'm not saying this is a full blown recipe, but simple ones are sometimes the ones you find yourself going to back to time and time. You can roast these in the oven as I did, or for even crispier results, pop those babies in the air fryer and be amazed. Totally non-sponsored, but I'm obsessed with dipping them in this Trader Joe's Aoili Garlic Mustard Sauce. This recipe takes minutes to throw together, especially if you get your brussels pre-chopped. The waiting game is in the roasting. I'm all about easy delicious recipes that make your week run a little smoother. Now, there are measurements written down, but truth be told... I measure with my heart and so should you! All of these ingredients are to taste, so don't be afraid to adjust- I promise you can't mess this up.

Recipe
Ingredients
1 lb Brussels sprouts
2 large cloves of garlic (or more), minced
2 tbsp olive or avocado oil
2 tbsp pure honey
3 tbsp roasted pine nuts
1 tsp salt
1 tsp pepper
Instructions
Pre-heat oven to 425 degrees F
Wash and chop your Brussels sprouts in to 1/2's or 1/4's if not already purchased that way.
In a medium sized bowl, toss together all ingredients except for the honey and pine nuts.
Place on baking sheet cut side down (for extra crispy goodness)
Pop in oven for 20-25 minutes or until tender and crispy.
Carefully place roasted Brussels sprouts in a medium sized bowl while still piping hot.
Drizzle honey and add roasted pine nuts on top and vigorously toss. The heat will cause the honey to thin and coat all of the crispy pieces. Toss until your Brussels sprouts are evenly coated.
Best served warm.
